On the Fulltime system, would it be possible to add a place to detail the manager & coaches present at a match when the teams submit the result/teamsheet (& Match day app)?

This would help with any potential safeguarding issues

Add your own questions under League Marks to do that?

We do not believe that this is something that a majority of leagues currently require and can be worked around by asking the question under league Marks
